For fish delivered under ice, FDA recommends you ensure the fish are completely surrounded by ice at the time of delivery.For fish delivered under ice on an open-bed truck, FDA recommends the fish are stored completely surrounded by ice AND the internal temperature of the fish at the time of delivery is 40F or below (taken for a representative number of fish in the lot.)
