Local celery root season is in full swing for Bab Farms. Harvesting out of the Santa Maria Valley in California, Babs Matt Hiltner says that harvesting the vegetable takes a lot of precision, attention to detail, and, as seen here, a very sharp knife.
Demand for celery has been steady so far this season, and Bab anticipates it to pick up even more heading into fall and winter, particularly given celery root works in many warm dishes from soups to mashes.
