Researchers have developed a biomanufacturing process that they say could unlock the commercial potential of a low-calorie, low- glycaemic sugar.

Tagatose has only 38% of the calories of traditional table sugar, is safe for diabetics and will not cause cavities. Despite being approved by the FDA as a food additive, the sweetener is too expensive to produce.
