Cherries start to ripen in the northern hemisphere around May, but when it is winter in the north, the cherries begin to ripen in the southern hemisphere. It is therefore not surprising that China is the largest export market for Chilean cherries. Around 80%-90% of the Chilean cherry export is destined for the Chinese market.
