Stephen OHara: Being heat stable and easy to process stable they are more suitable than probiotics for use as food ingredients. One key benefit is that they have a far longer shelf-life than live bacteria. For example, a prebiotic that we are developing at OptiBiotix currently has a shelf-life of two years, and we think that we will probably be able to extend that to five years. So, there is much le
