Just 100 grams of broccoli powder provides the same health benefits as 1 kilo (4 servings) of the fresh product, according to a study by the Laboratory of Phytochemistry at the Department of Science and Food Technology of CEBAS-CSIC, which actively collaborates with the +Brcoli Association.
The broccoli powder is obtained by dehydration using either heat or lyophilization; the batch is then quickly frozen and the ice removed by gentle heating in a vacuum. This way, the nutrient content remains
