Cardamom, once limited in this country to Indian cuisine and Scandinavian baking, is spreading out to breads and spice blends. Dried flowers, specifically lavender, are appearing in rubs and cocktails, and sumac has made inroads into prepared foods via pilafs and salad preparations.
