Ingredients
3 cups thickened cream
1 cup milk
4 cinnamon sticks
1/4 teaspoon salt
1/4 cup honey
1/2 cup caster sugar
9 large egg yolks
1/2 cup caster sugar, extra
Method
1. Bring cream, milk, cinnamon sticks and salt to a simmer in a medium saucepan over medium heat, stirring often. Remove from heat. Set aside for 1 hour to allow flavours to develop.
2. Preheat oven to 150C/130C fan-forced. Strain milk mixture through a fine sieve over a bowl. Return to pan. Add honey and 1/4 cup sugar.
