Roasted chicken thighs with vegetables & croutons

Ingredients

4 slices Coles bakery multigrain sandwich bread, cut into 1.5cm cubes
1 tablespoon extra virgin olive oil
500g Coles RSPCA approved chicken thigh fillets
225g sweet potato, peeled, cut into 1.5cm dice
1 medium carrot (100g), peeled, cut into 1.5cm dice
1 small turnip (90g), peeled, cut into 1.5cm dice
1 stick celery, thinly sliced
1 medium brown onion, roughly chopped
1 tablespoon chopped fresh parsley
1 tablespoon fresh thyme leaves, chopped
1/2 cup Coles Brand real chicken stoc
