Bean and vegetable soup

Ingredients

1 tablespoon olive oil
1 onion, finely chopped
2 garlic cloves, crushed
400g small chat potatoes, lightly chopped (see Notes)
4 cups salt-reduced vegetable stock
400g can diced tomatoes
2 cups water
2 x 300g cans soya beans, rinsed, drained (see Notes)
1 bunch English spinach, trimmed, washed, chopped
1/3 cup continental parsley leaves, chopped

Method

1. Heat oil in a large saucepan over medium heat. Cook onion and garlic for 4 to 5 minut
