o that the water is just simmering. Crack one egg into a coffee cup or small bowl and then gently transfer the egg to the simmering water. Repeat with remaining eggs. Allow the eggs to poach until the whites are set but the yolks are still creamy, about 3 minutes. Using a slotted spoon, gently the remove the eggs from the simmering water and place them in the warm olive oil-lime sauce (off the heat) until ready to serve.
