Sticky chilli chicken and brown rice bowl

Ingredients

1 long red chilli, seeds removed, finely chopped
4 garlic cloves, crushed
2 tablespoons rice vinegar
2 tablespoons kecap manis (Indonesian sweet soy sauce)
1 tablespoon sweet chilli sauce
1 tablespoon grated ginger
2 tablespoons honey
1 tablespoon soy sauce
150ml rice bran oil
8 chicken thighs, cut into 2.5cm pieces
2 eggs, lightly beaten
2 tablespoons finely chopped coriander
1 green capsicum, finely chopped
1 large bunch bok choy, trimmed, stalks and leaves each cut into 3cm p
