Baked zucchini with lemon and mint

Ingredients

4 medium zucchini, halved lengthways, roughly chopped
1 small red onion, halved, thinly sliced
1 tablespoon finely grated lemon rind
1/4 cup lemon juice
1 tablespoon olive oil
2 tablespoons small fresh mint leaves

Method

Preheat oven to 220C/200C fan-forced. Place zucchini, onion, lemon rind, lemon juice and oil in a baking dish. Season with salt and pepper. Toss to combine. Roast for 18 to 20 minutes or until zucchini is tender. Top with mint leaves. Serve.
