Second Hydrocooling
After sorting and bunching, the asparagus should be hydrocooled for a second time until the central bunches in the crates/boxes reach 1C (34F). Shower hydrocooling of asparagus bunches stacked in plastic crates/boxes is preferable.

The water should be disinfected as before.

Drainage
Following hydrocooling, the asparagus should be left in cold storage at 0.5-1.5oC (33-35F) for 30-60 minutes
