lespoon fresh lemon juice

teaspoon kosher salt

teaspoon freshly ground black pepper

3/8 teaspoon cayenne pepper

3 tablespoons drained prepared horseradish

Kosher salt and freshly ground black pepper to taste

Place the shallot, garlic and capers in a mini food processor and process 5 seconds. Add egg yolk and grainy mustard and process 10 seconds.

In a small bowl, mix the vinegar and dry mustard together.

Start adding 1/3 of the oil slowly to the shallot mixture while processing. Add th
