Another critical aspect is the knowledge base of food technologists and food engineers. Till recently food safety was not an integral part of the training programme of food professionals. There is a need for formalised training of food professionals in food safety science. Investigations of the contamination of food by allergens have indicated that the lack of proper training often contributes to the inclusion of improper ingredients like allergens. Wh
